Butternut Squash Chocolate Cake

This week's blogging marathon theme is 'Secret Ingredient', this theme sounds interesting na. Trust me, even i was so thrilled to make three different beautiful dishes out of three different secret ingredients. My today's post, goes to Butternut Squash. Almost like pumpkin, butternut squash works awesome to make some delicious desserts or cakes with it. I have already dished out couple of dishes out of this incredible vegetable. From Indian to Fusion dishes, you can prepare many different dishes from this vegetable. Once cooked and pureed, you can use the butternut squash puree to make delightful desserts out of it.

Once i picked Secret Ingredients as theme,i couldnt stop myself to bake this alluring chocolate loaded cake with butternut squash puree. Though the puree replace very well the eggs in this cake, i couldnt stop myself to add eggs. However my cake is baked with eggs, if you want to bake this same cake as eggless, just go on either by adding yogurt or oil instead of eggs. If am trying something new,i always stick to bake with chocolate. Obviously i went with chocolate and this cake came out extremely fabulous. None noticed that this cake is baked with butternut squash and everyone at home enjoyed thoroughly for their evening snacks with their favourite drink.

Butternut squash Chocolate Cake

2cups All purpose flour
1/2cup Unsweetened cocao powder
1/2tsp Baking soda
1tsp Baking powder
1/2tsp Salt
100grams Butter (room temperature)
1cup Sugar
2nos Large eggs
3/4cup Butternut Squash puree
1tsp Vanilla extract
1/2cup Finely chopped dark chocolate chunks

Preheat the oven to 350F, grease a loaf pan well and keep aside.

Sift the flour,baking soda,baking powder and salt and keep aside.

In an another bowl,beat the butter and sugar together until they turns fluffy.

Add the eggs one at a time and beat well.

Beat in the vanilla extract, butternut squash puree.

Fold in the flour mixture,chocolate chunks gently and mix with a spatula,dont overmix.

Pour the cake batter to the already prepared loaf pan.

Bake in middle rack for 30-35minutes until a skewer inserted comes out clean.

Let it cool completely, slice and enjoy.

Your secret ingredient , squash sounds interesting . Definitely the chocolate cake is an excellent choice , the cake looks yum.

Wow wow Priya, so true to the theme!..when I selected this theme, I was so excited and wondering what amazing dishes you guys will do, just as I thought, this chocolate cake is stunning and so inviting!..what an idea to include that squash!..making it soon..

Love butternut squash. The cake has turned out so tempting. I've sometimes used butternut squash instead of pumpkin in baking and you can't tell the difference.
